I'm a regular reader of Sandra and woo and the latest story arc over there interested me in the Gunnerkrigg Court and I read all of it last night. But I can't find anything on the site about when the comic updates, and I'd really like to know so I can check back on the right days. Thanks for your help! <3

Comic is very regular, the author is british and usually updates at 8am GMT Mon Wed and Fri(I usually check in just before I leave for work!)
I saw the question marks too, and to answer your question: yes.

It updates whenever I want it to here in Gillitie, because I'm the all-powerful Coyote. Obviously.
But when I took a vacation to my original home out in Arizona, it updates somewhere between 12 and 1 am on Mondays, Wednesdays, and Fridays.

Probably the reason that it varies in Arizona is because your state doesn't do daylight savings time. I think there may be one other state that doesn't have daylight saving time either.

That thing says midnight and the comic updates at 11PM for me. Doesn't seem to take DST into account?

If Daylight Savings Time is in effect, it updates at PDT, otherwise, it updates at midnight PST. I live on the west coast of the US, and it always always updates at midnight for me. I could "set my watch by it": if it's an hour early or late, that probably means I forgot to switch my watch for fall/spring.
In fact, it usually updates on the very minute the hour ticks over. I think it only falls outside of 5 minutes, like, twice a year on average. Some webcomics, you're never sure exactly when the new page will go live, just "sometime on Sunday evening / Monday morning", but GC uploads like clockwork, which is pretty awesome. Sam and Fuzzy, if you read that, has a similarly reliable update schedule (at the same times, too!)
Sunday nights, 12:05am PT (so, technically, the beginning of Monday), I always open GC and SaF to find a new update. And plenty of other things update around midnight ET on Mondays, a lot of my bookmarks have something new. I always see Sunday night just before bed as "Webcomic Time".

Well, late summer / early fall is weird for time zones: a lot of places have ended DST but a lot of other places haven't. Usually I have to subtract 17 hours from Korea time to know when to watch Starcraft games... but they're on KST and I'm in PDT, so I only subtract 16 hours.
Typing "PST" or "PDT" when the other is appropriate (or EST/EDT, etc) is one of the most confusion-causing things about time zones.
