Lots of flashbacks to my early dating career for me this chapter. A girl I dated briefly in my first semester of college used to carry around a freeze-dried mouse in her purse. She said it was a former pet that she preserved after it died. Not sure if it was a magic component but she sure did use it as charm for conversation-starting and making herself popular via "buzz." She claimed to have won a prize at a movie premier by pulling it out when the organizer/MC asked the audience if anyone had a picture of a dead pet. After a brief consultation with other staff they decided that an actual dead pet was in fact superior to a photo, apparently.

Focus on Jenny's new look! Her hair color is artificial; it's hard to say what her natural color is (her eyebrows seem black, like her "old" hair color, but that could be makeup, which she seems to use lots of).
How does she know whether any given rat is (or was, considering it's the dried, brittle bones she needs) depressed? She must have a Retroactively Psychoanalyze Dead Rat spell for that.

The rats in NYC rule the subways, alleys, municipal government and real estate companies. Therefore, any rat not from New York is a depressed rat.

She definitely seems like the sort of witch who would pride herself on getting high-quality, artisanal, preservative-free, bones from only the most truly despairing rats, imported from a little shop in France, rather the cheap mass-produced stuff. Ditto for the goat's blood.

Depressed rat is easy... just keep a number of rats in same slightly crowded cage, with a few places to hide. The toughest male will dominate, and try to horde the females, the weaker males will be hiding and depressed.

I...I'm so torn about this...on one hand, I love Paz, and she's stated quite clearly in the past that she tries to make like for her lab animals as comfortable as possible, so it feels like they shouldn't be able to inflict such long-term emotional damage on them when she's on the job.
On the other hand, your idea is REALLY funny.
...ok, yeah, it's canon. I'm with you 100% of the way.

Chemical means are probably unsuitable when a particular state is required, but… A wet rat is returned to the cage after swimming endurance test. Starts drying up, the heater shuts down. Walk to the exercise wheel, almost warms up, the wheel suddenly brakes, again and again. The rat is depressed now. The feeder has the least-favourite food, but the rat walks to it, pokes the nose in… and gets swiftly and cleanly decapitated by the built-in guillotine. How does she know whether any given rat is (or was, considering it's the dried, brittle bones she needs) depressed? Aura reading. Though with Court grade equipment and for known qualities (specifically rat and how much depressed) this could be automated. Good point – she must import them from the outside world. Indeed.
