So she changes names to avoid people finding out she doesn't (detectable) age. To keep fool people from asking "What are you?".
And she promised to keep "Jones" as long as she could - until it brought on suspicion. I suspect being in the Court would allow her to stay for a long time without changing her name. She's in with such unusual people.

Inevitably this "answer" to the question of what Jones is has raised new questions without actually answering anything (other than to confirm Jones doesn't age).

The fact that she actually kept her (current at the time) first given name and changed only her surname seems to show that it is not so much "name stealing", but just changing it. If she can mix and match like that, she could probably just as well make something up. I think when she takes other people's names it is just from convenience, or personal reasons. Huh. Maybe we'll see her painting caves in France instead... The 'days' had 'previous' and then just flat out a week. I wonder if Tom will use millennium?

Maybe it's the hairstyle changing to reflect the changing time period, but it seems like her face is changing, getting younger.
Maybe she does age, albeit very, very slowly?

Here, guys, I updated the graph I presented to you on last wednesday. Two new datapoints are added: the one from friday, wich most of you assumed was around 1900, the re-appearance of an elizabeth langdon at porthsmouth, and todays point is around the end of Samuel Langdons life (1797). (by the way, the graph totally called those dates, as you can see; I didn't change the prediction line) Next up: 1630: Jones offfers popcorn to english colonists (http://en.wikipedia.org/wiki/1630) Strip after that: somewhere in the 1300s: If jones still is in america, no colonists will have been there yet, so maybe then it is coyote time?

I've been wondering if maybe Jones is just incapable of making expressions. Like what if she's just literally stone-faced. We all currently think of her as emotionless, but what if her body is actually just physically incapable of presenting her emotions? because if you think about it, that really changes how you interpret what someone says. What if she was smiling fondly in the last panel of this page?
I dunno it's just some random thought that was floatin round my head

But I can't say for sure about the last part of your sentence. She may be immortal because of some mystico-magical mumbo jumbo. More like alchemical, as opposed to magical. Which has got me wondering: since it's theorized that she may be an alchemist who regained immortality and who had to “avoid suspicion” throughout the years (decades), will the next page(s) show her being accused of being a witch? There was never a "coyote-moment" in which she would have taken something spiritual from somebody. She was merely asked to bear man's name. Which, by the way, happens to many women even this particular day.

What I had thought was his collar, Samuel Langdon's bow tie looks unlike typically-shaped bow ties, for late 1700s and even modern-day fashion standards. However, mustache-shaped bow ties are not unusual in present popular culture fashion. But I doubt that Tom meant to draw his bow tie to resemble a mustache... now I'm thinking about hipsters and their mustache fad.

Wait, you guys are saying she's in the States? If so, there's certainly an interesting parallel in that both she and Coyote traveled from the New World to the Old.
But, maybe not. I kind of think Langdon's land looks more "English Countryside" than "Southern Plantation."
Also, this sequence is starting to remind me of the Hobb chapters in Neil Gaiman's Sandman. Even the bit where she gets busted for long life takes place in about the same time period as when that woman tracked down Hobb and Morpheus for meeting in the same place once a century.
